A calzone is a round of pizza dough folded in half over the filling and crimped shut, usually with ricotta inside and marinara on the side. A stromboli is a rectangle of dough rolled up into a log, and it can have the sauce baked right in.

Both are on the menu at Ruffrano’s Hell’s Kitchen Pizza in Security, at our shop on Main Street, so you can try one of each and decide for yourself.

What makes a calzone a calzone?

Shape comes first. A calzone starts as a circle of dough that gets folded over once into a half moon, then crimped along the edge to seal the filling inside. Ricotta is the classic calzone cheese, often paired with mozzarella, and traditionally the sauce stays out of the filling.

Instead, the marinara comes on the side for dipping. Calzones come from Naples, Italy, where folding the dough turned pizza into something easy to carry.

What makes a stromboli a stromboli?

A stromboli starts as a rectangle of dough. It gets covered with cheese and fillings, rolled up lengthwise like a cinnamon roll, sealed by pressing the extra dough over the edges, and baked. Stromboli can be baked with the tomato sauce inside, and mozzarella does the cheese work, since ricotta usually isn’t part of it.

Unlike the calzone, the stromboli is an Italian-American dish that came out of the Philadelphia area.

Calzone vs stromboli at a glance

Start with the dough. A calzone is a circle folded in half and crimped, and a stromboli is a rectangle rolled up into a log. Then look at the cheese and the sauce: ricotta with marinara for dipping points to a calzone, while sauce baked inside points to a stromboli.

Which calzones and strombolis can I order in Security?

Our menu mostly follows the classic split. Most of our calzones are built on ricotta and mozzarella, and both of our strombolis carry sauce inside. At our Security shop you’ll find the Regular, Little Angel, Little Devil, Incline and Pepperoni Wheel calzones, plus the classic Stromboli and the Veggie Stromboli.

The Regular keeps it simple with mozzarella and ricotta, and the Little Angel adds artichoke hearts. The Incline loads up on mushrooms, spinach, artichoke hearts and bacon. Want heat? The Little Devil skips the ricotta and brings cherry peppers with Hellfire.

For strombolis, the classic Stromboli rolls sauce and mozzarella with ham, salami and pepperoni. The Veggie Stromboli swaps the meat for mushrooms, onions and green bell peppers.

Here’s a house detail: we serve our calzones and our strombolis with a side of marinara, so you get a dip either way. See the full menu for every option.

Which one should I order?

Pick a calzone if you love creamy ricotta and like dipping each bite in marinara. Pick a stromboli if you want the sauce baked into the filling, with mozzarella doing the cheese work. Can’t decide? Order one of each, split them, and see which one your group reaches for first.
